A Note from Matt Prentice2012 is going to be an exciting year for our team and the entire Southeast Michigan area. We are beginning to see new jobs being added and the overall feeling is one of cautious optimism for the first time in years. No one understands the chaos of the last few years as much as I do personally, however our automotive companies are signifi cantly healthier, as is our organization. We just enjoyed a successful North American Auto Show where we catered the party for Cars.com. Twelve hundred guests at the Filmore were blown away by the incredible meal and enjoyed the very hot Maroon 5 as the entertainment. It was a perfect and very successful way to begin the new year. Better still, they have already booked us for next year. So too has Mercedes Benz who has 500 to kick off Auto Show at Coach Insignia each year. Our catering division will begin hiring 50 new positions as we gear up for the busiest catering season we have had in years. This is due in large part to the addition of Adat Shalom Synagogue in Farmington Hills. Our incredibly talented Director of Catering Florina Boyle will begin the hiring process in February. We also plan to add another 50 Michigan jobs for our newly announced Gastronomy in Southfield. This year we also plan to open at least two additional venues—an upscale, bistro-type deli in Milford and the rebirth of my personal favorite, Morels, A Michigan Bistro. Matt Prentice Is In The Kitchen At Coach Insignia
Matt and the team revamped the Coach Insignia menu which debuted on January 17th. We think you will find it amazing. It is an American Winter Menu with a focus on local products. Several of Gastronomy Chef Jaimee Jeffrey’s dishes are also on the new menu to give guests a sneak peek of what’s to come at Gastronomy. Matt’s favorite is Jaimee’s Rabbit Risotto with Foie Gras Snow while COO, Eric Djordjevic, tells us one of his favorites is Chef Jaimee’s raw and vegan lasagna. We’re excited to have Matt back in the kitchen creating his own brand of culinary magic. Matt’s style has been written about locally and nationally for many years. Go to Coach and you will see why Nation’s Restaurant News named him “One of the Top 50 Tastemakers” of the last century.
A Little About GastronomyHave you heard the news? We are opening our first new restaurant in many years in Southfield in the Baker Tilly building. Gastronomy, An American Bistro, will have a 100-seat dining room with an open display kitchen to allow you to be part of the kitchen experience. Designer Karen Ogden delivered a beautiful design for this property and we anticipate it opening in late spring. Gastronomy will focus on tastes and aromas that are entirely American sourced. We selected Chef Jaimee Jeffrey to be the Executive Chef for this new venture. While Jaimee is Michigan born and raised, he spent the last 15 years in Europe at several 2- and 3-Star Michelin restaurants in both France and Germany. He has also spent time in Argentina. He has a very unusual style and both Eric Djordjevic and Matt are amazed by his food. Eric is already on the lookout for new American wines and beers to add to the American favorites we already serve at Coach, No.VI and Northern Lakes. Valentine's Day Is Near
Probably the most romantic spot in town is Coach Insignia. Coach will sell out very early. More engagements occur at Coach than in any other restaurant in Michigan, and many of them happen on or near Valentine’s Day. Make your reservation early! The Lover's FeastAs is tradition, we have a pre-celebration the day before Valentine's Day for those who want to have an incredible dinner without all the tumult of Valentine's Day. The feast begins at 7pm and Chef Jeremy Kalmus will amaze you with his Five Course Menu. The Feast is $57.00 Prix Fixe plus tax and gratuity. Wine Wednesdays in MarchEach Wednesday in March, Chef Jeremy Kalmus at No.VI Chophouse will offer a different multi-course wine dinner for our guests. This talented chef is quickly becoming one of Michigan’s best, and won the coveted Iron Chef title from Gleaner’s in 2011. Each dinner will be carefully paired with wonderful wines. Around the Globe in 12 Days Wine SeriesThe Around the Globe in 12 Days wine series continues on Wednesday, February 8th, at Northern Lakes Seafood Company. We will be hosting a casual walk around tasting that focuses on the wines of Australia and New Zealand. Plan on coming if you are interested in learning about these two great southern hemisphere regions that are renowned for their new world renditions of Shiraz, Grenache, Sauvignon Blanc and Pinot Noir. Accompanying the wines, Executive Chef Travis Waynick will be preparing a light offering of regionally influenced foods that are sure to be a perfect complement. The cost of the event is $40.00 per person, inclusive of wines, light hors d’oeuvres, tax and gratuity, plus you will receive a 20% off certificate to use for dinner afterward! Our travels will bring us back stateside for a formal wine dinner at Coach Insignia. We will be showcasing the prized boutique Napa wineries of Hoopes and Liparita. Owner Spencer Hoopes and his wine maker Brian Bowman are flying in specifically for this dinner with us. In blind tastings, Hoopes has been put on par with some of Napa’s most prestigious and expensive cult cabernets. Accompanying the wines will be a world-class five-course meal that will enhance every nuance of the wines.
